Slow bread

Bread that takes its time.

Island bakeries are quick and cheap. We went the other way: a long fermentation, flour we bring in ourselves from Germany and Italy, and a loaf that still tastes good on day three.

3DAYS

from first mix to finished crust, for every sourdough loaf.

16MIN

for Andrea’s first batch to sell out at the village Christmas market. The next one went in 15.

What’s on the counter.

Everything is baked in Paul do Mar the morning you buy it. When a tray is gone, it’s gone, so come early for the cardamom buns.

Mistura de amigos

Our house blend is a mix of friends in more ways than one. Nicaragua and Guatemala, roasted here on Madeira by our friends at Gato Legal Coffee Roastery and built to sit alongside everything we bake. Grab a bag at the counter and brew it at home.

Our story

Two Slovaks, one starter, one harbour.

Matej and Andrea came to Madeira on holiday and knew within three days they wanted to stay. They moved over with their family, and Andrea started baking sourdough at home, just for the joy of it.

Friends asked for a loaf, then neighbours, then friends of neighbours. When her bakes sold out at the village Christmas market in sixteen minutes, it was clear this was more than a hobby. A few weeks later a friend mentioned an empty space on the harbour in Paul do Mar, with the mountains behind and the ocean in front.

Andrea bakes. Matej makes your coffee and talks to everyone. The name comes from kamoši, Slovak for friends, because that’s how we want you to feel when you walk in.
